Snow Caps

Snowy white holidays didn’t seem so far away when my grandmother made these crispy peppermint meringues. Melting just like frost in your mouth, I’ve passed my love of Snow Caps down to my husband and young son. A simple recipe that I hope adds some “snow” to your holidays!

Beat egg whites, extract, tartar and salt until soft peaks form. Gradually add sugar, beating until still peaks form. Drop tablespoon-sized mounds on a baking sheet lined with parchment paper. Bake at 325° for 25 minutes. Turn off oven and let cookies sit in oven for about an hour. 


  • 2 egg whites
  • ½ teaspoon peppermint extract
  • ⅛ teaspoon cream of tartar
  • Pinch of salt
  • ¾ cup sugar
  • 1 cup mini chocolate chips
