Lucy's Dirty Chai Coffee Cake

This spice-laden cake pairs well with a fresh cup of coffee, or with either of Lucy’s fall drink specials: a Cinnamon Brown Sugar Latte or Ginger Chamomile Tea Latte. Recipe from Lucy's Coffee Co.

Ingredients

Topping
  • ½ cup butter, room temperature
  • 1½ cups  our
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger, ground cardamom and ground allspice
  • ¼ teaspoon salt
Cake
  • 2½ cups  our
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • ½ teaspoon salt
  • ¾ cup butter, at room temperature
  • 1 cup brown sugar
  • 3 eggs
  • 1¼ cup yogurt
  • 1 teaspoon vanilla
  • 1 tablespoon espresso or strongly brewed coffee
Finish
  • Espresso Glaze [recipe below]

Instructions

To make the topping:

Combine flour, sugars, spices and salt together in a bowl. Combine with butter until you have coarse crumbs. Set aside.

To make the cake:

Mix all dry ingredients together. Cream butter and sugar together until light and fluffy. Beat in eggs 1 at a time, followed by the vanilla and espresso. Reduce speed to low and alternate between dry ingredients and yogurt until combined. Spoon half the mixture into the pan, sprinkle with half of the topping; top with the remaining batter and sprinkle the rest of the topping. Bake cake until golden brown, 45 –60 minutes. Let the cake cool completely.

Glaze:

1-1/2 cup powdered sugar
2 tablespoons espresso or strongly breweed coffee

When ready to glaze, combine the powdered sugar and espresso so it forms a thick glaze. Drizzle icing on top of cake and enjoy!
