- 10 medium-sized gold potatoes, peeled and cut into 1½ -inch chunks
- ¼ cup unsalted butter
- 5 ounces fresh goat cheese
- 2 teaspoons salt
- 1 cup half and half
- 1 cup parmesan cheese, grated
Preheat oven to 350°. Place potatoes in a pot with cold water to cover. Bring water to a boil and reduce heat to medium. Boil for 15 minutes and drain. Mash potatoes with butter, goat cheese and half and half. Add salt to taste. Place potatoes in casserole dish and sprinkle with parmesan. Bake until cheese melts and top is starting to brown, about 20 minutes.
