- 5 medium red potatoes
- 1 pack chicken or pork Italian sausage, casing removed
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, chopped
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 can cannelini beans
- 3 cups chicken broth
- 2 cups milk
- Splash of whipping cream
- 1 bunch kale, roughly chopped
Peel, slice and boil the potatoes until soft. Drain and set aside.
Heat a large pot over medium-high heat. Remove the casing and add the Italian sausage to the pot and cook for about 5 minutes, breaking it into chunks with a wooden spoon, until browned.
Add the onions, garlic, oregano and red pepper flakes and continue to cook until the onion is soft, about 5 minutes. Add the cooked potatoes and beans. Season with salt and pepper. Stir for a couple of minutes to combine flavors. Add chicken broth and milk. Cover and simmer for about 3 minutes.
Pour in heavy whipping cream. Toss in the kale and stir until slightly wilted (if needed, add a cup of broth or water and stir until the soup is at your desired consistency).
Serve soup with crusty, warm bread.
About the Dish...
I’ve always loved to cook for my family and friends (thankful for my mom, whose love for cooking and sharing good food always inspires me) and I decided to recreate this soup at home. It turned out great and my husband and two kids loved it!
Since then, I’ve always made this soup during fall and winter, either on a quiet evening just for the four of us or as part of the menu for a holiday gathering with friends we host at home. It’s priceless to see how the delicious goodness of this soup brings much warmth and smiles on my family and friends’ faces.
