Blueberries Preserved in Honey

Spoon these sweet preserved berries and honey over yogurt, goat cheese crostini, or a spring salad with tender herbs.

Ingredients

  • 2–3 pints of fresh, organic blueberries, rinsed well
  • ½ cup honey
  • 1 ¼ cup water
  • 1–2 (depending on size) sterilized jars with lids

Instructions

Preheat the oven to 275°F. Place the sterilized jars and lids in the hot oven for 30 minutes. 

Meanwhile, in a heavy saucepan, bring the water and honey to a boil, then reduce heat and simmer for 3–5 minutes. Remove pan from heat and let cool slightly. 

Remove the jars and lids from the oven and allow to cool for several minutes. Place the rinsed blueberries in the jars, then pour the honey syrup over fruit and seal jars. Store in the refrigerator for up to 4 months. Bring to room temperature before serving.
