- Leaves from one bunch of beets
- 1/4 cup chopped walnuts
- 1/3 cup Parmesan cheese, grated
- 2 cloves garlic
- Juice and zest from 1/2 a lemon
- 1/2 cup olive oil
- salt to taste
Blitz the leaves, walnuts, cheese, garlic, lemon juice and zest in a blender or food processor. With the motor running, slowly pour in olive oil until sauce is smooth. Add salt to taste.
